Produce Spotlight: Murasaki Sweet Potatoes


Murasaki sweet potatoes aka Japanese sweet potatoes, are definitely not your average sweet potatoes! Despite their name, they are originally from Louisiana and most commonly grown in California. They have a distinct nutty, earthy yet sweet flavor with deep purple skin and a creamy white interior.


Compared to average sweet potatoes, Murasaki sweet potatoes have a drier texture more similar to a white potato. Due to their lower moisture content, Muraski sweet potatoes contain more starch and have a light fluffy texture. They can be used like other sweet potatoes and work nicely in soups and stews. They pair nicely with savory items such as scallions, garlic, miso, soy sauce, sesame oil, olive oil, broccoli and chickpeas.


Murasaki sweet potatoes are an excellent source of vitamin A, and a good source of potassium, dietary fiber, and vitamin C. They also contain some iron, calcium, protein, and amino acids (the building blocks of protein). They are an excellent choice for supporting the immune system and a healthy heart. Muraski sweet potatoes are the perfect choice for a hearty, delicious and nutritious fall meal!
